I seem to recall that if you expose mushrooms to UV light you can get a source of vitamin D from them as well.

Good plan.

Mushrooms are a nice space efficient source of food.

You might want to add an air humidity sensor with them, they do not like to get too dry and the recycled air in space is usually very dry.
