Just read the pin. If it is HIGH (aka pressed) then do a delay(100) and read the pin again to see if it is still HIGH. If so, then you react. Like the post above mentioned, break the issue down to its core. Make a new sketch that only reads the touchscreen and does something like write to serial port or flips an LED on or off.
