You might find that the 3D printed gears also limit torque in their own way ;) Or just print them super robust. It could be quite likely that your rover will just pick up crud wrapped around the axles like my Roomba and this can detect when they need to be cleaned out. Do you have a 6-axis gyro on the rover? Going uphill would also require more current. Also it is common for a wheel encoder to be placed on the directly on the wheel hub and not on the motor side.
