AnnaLisa,

Very interesting and challenging project. In addition to cutting the dough wouldn't you need a method to remove the extra dough (out side of the lines)? A lot of the time these dough would be re-balled and rolled out for more cookies. This could be yet another innovation aspect of your design.

This was one of my favorite proposed challenges of all time, I really look forward to seeing how you make this happen. Don't worry about people knowing more or less than you, this community is here to help everyone.

There should be lots of documentation or user manuals about how the baking industry or even small Toast machines work that may be helpful.

I advise get as much planning done as you can before your kit arrives and order anything else you need so you don't end up with a bottle neck.

This looks like a great project.

An alternative approach might be something along the lines of the pancake printers which use an additive rather than a subtractive approach.

The main difference I suspect here would be the thicker consistency of the dough versus batter and that it would require an oven rather than a hot plate.

You used to get handheld gadgets with a plunger driven off a lead screw for cake decorating which could perhaps save some work by mounting one on the XY carriage and hooking up its motor to a motor controller connected to the R-Pi. This would allow you to plot the dough rather than carve it.

However I suspect that the dough sheet may play an important part in the baking of cookies which is why it looks as if you are planning on carving out of the dough sheet ? By the sounds of it you are looking at taking more of a vinyl cutter type approach here with the CNC side controlling some sort of a blade.
