I wonder if you stopped the Backlight would your run time increase very much.

Hi!
It's nice to see your progress =) But I have to note that you shouldn't use a linear DC-DC (7805) for this purpose due to its inefficiency, as well as current limit. Use a switching regulator instead (something LM2576-based from eBay should be enough). That should increase operational time of a system using the battery, as well as reduce heat emissions.
