Yes going off grid is a big learning experience.

Growing up, I knew one family that did not get electricity to their house until the 1960's.

It was a rare case, but it shows that some people just did not want to live in modern times.

Another approach for water tank level sensing might be to install a water pressure sensor at the outlet of each tank you want to monitor:

Should just require the addition of a T-piece and an appropriate thread reducer to get it installed.

If you compare the readings when the tank is full/empty you can then create a water level scale.

The Grove water level sensor uses a couple of QTouch enabled ATTiny 1616 AVRs to do something similar:

Perhaps just requires scaling to the resolution you require ?
