Yes you can put out hdmi , gpio(tft) and composite at the same time (I tested it out yesterday with the A+ and RPI3 ), but you have to decide how you want to output the sound (you can only force hdmi or 3,5 jack not both)

You have to modify the config.txt file quite a bit to make it happen.

About that speaker on the PI zero, wouldn't that clash with the buttons and display connection that take all the gpio? maybe a little hub would help with a tiny usb sound card instead?
