I&amp;#39;d disagree slightly about the &amp;#39;it is difficult to achieve more than 8-bit resolution&amp;#39;. When I started, even a six bit flash converter was amazing [and expensive], but later 10-bit and 12-bit were routinely being used for digital processing of analogue TV signals, 10-bit in consumer chips and 12-bit in studio equipment.&lt;/p&gt;&lt;p&gt;&amp;nbsp;&lt;/p&gt;&lt;p&gt;Other than those minor quibbles, a useful introduction to the topic.&lt;/p&gt;&lt;p&gt;&amp;nbsp;&lt;/p&gt;&lt;p&gt;As to your question at the end, I&amp;#39;ve used flash converters for processing video signals to drive LED screens (long time back), and SARs (in microcontrollers) for all the usual type of uses (reading sensors and pots, and monitoring voltage and current levels).
