I have to ask - are you adding a safety cover and interlock system as your eyesight and that of other people is very precious. A simple plywood one would suffice and might also allow you to easily extract the smoke being produced to vent that outside.

A nice find. I once had a massive X-Y plotter bed, probably 2 x 2 metres which had been used for cutting the masks used in making integrated circuits (a long, long time ago). I was very excited when I first got it, but time passed, other pressures in life and after many years of doing nothing to it it was disposed off. I hope you achieve a better outcome than I did.

The plotter looks reasonably well built.

You should be able to do a good job in repurposing this device.
