First rule of engineering is reuse, reuse and reuse.

Power supply design is a very detailed profession, luckily, there are a lot of example designs that you can choose from and experiment with as you discovered.

You will find that a lot of specialized equipment uses very specifically designed power supplies tuned to the specific requirements of the device.

Bench power supplies are generally a robust design with safeguards built in to protect the user, the power supply and the device under test. Not necessarily in that order.

Excellent step-by-step progression into the field. A power supply is a great choice for a project - very useful for future work and a great way to learn lots of crucial electronics concepts and building techniques.
