The user interface for I was there! is its own presentation. It's intuitive and encouraging. I could see corporations employing this in their recycling efforts throughout the year and especially on Earth Day. I imagine keeping score in a competition. Project writeup looks really great! It is a novel approach to recycling control and I think it is very interesting. I am curious about the use of WolfSSL though... are you only using it to get HMAC for message digests?

I like the concept, but a JWT seems a bit of a mismatch with the idea that the QR code can be verified later. A JWT is designed to expire. It has a specific expiry time (often an hour after an issue) and a properly secure implementation will also expire and rotate the signing keys on a regular basis.
