I think I have a similar Q as AG also. Ben Heck did a video about putting a RaspPi & 7"LCD Touch-Screen into a 3D-printed enclosure. I put mine in a SmartiPi enclosure. The video "glossed-over" the Virtual Keyboard on 7" Screen. I could not get the virtual keyboard to appear on my LCD screen. A USB-connected Keyboard works Fine as does the USB-connected Mouse whose Cursor can also controlled by using the 7" LCD Touch-Screen.

TS(Time Stamp) 12:56PM EDT 21OCT16. Got the Virtual keyboard to work on my RaspPi 3 B-SmartPi Touch 7" Case. I wasn't selecting the right Drop-Downs in the RaspPi GUI. BTW this was Raspian GUI b/f the intro of Pixel "look" for RaspPi
