We would use the Intel Edison kit to provide processing power to an Ambient Assisted Living project (AAL) whereby we use the kit to develop a two way video link from the home of elderly or incapacitated people to facilitate them staying in their homes longer when age and isolation  conditions currently dictate otherwise. This includes non-intrusive sensors about the home which are analysed to determine if the person is active and behaving normally and a strong link to local support groups, family and doctor. Such analysis can detect the early signs of Alzheimer's  and Parkinson's diseases and a whole range of other conditions and supports such as Mindfulness that enables people to stay in their homes longer with a minimal intervention of medical remedies. The core of this project is a standard IPTV with added stereo camera linked to a standard router but with a Intel Edison processor between these links to expand out the sensor network, provide local processing and provide easy to use two way video calls.
