If you look at Adafruit product page you will see that all the images have that left side blank. It is possible that the actual display does not start till there. A close look at the display when off should show a difference in the colour of the display if this is so. if not then as max stated, the config.txt file is where you can tweak the settings

Re the resolution. You have to remember you only have 320x240 dots for the entire screen, your not going to be able to avoid the need for scrolling of the display with the standard desktop, if you want that you will need to use a display with closer to 800x600 or more

you could try reducing the font and adapting the config.txt or other config files to reduce the resolution of the screen to match your display but I doubt you will be happy with the result.

If you are planning on using this for a specific app your writing then you can code for the correct resolution ?

You may have somehow gotten an incorrect video option in your "config.txt" file.
