This circuit will dissipate a lot of heat, so the fan then should work harder to cool it : ) Also at low speed, there is a risk the motor may not turn, overheating things.
You could use a transformer, or check out lamp-dimmer style circuits, they are worth exploring, and can perform very basic fan speed regulation although some won't work with the high inductance from the motor coils. I recall trying this with a triac as a teenager, it worked ok-ish with the occasional tingle from the potentiometer shaft : (
