I'll build a smart visitor alert for my front porch. We have visitors, wanted and not, throughout the day. Based on the time of day I can ring the doorbell before they come up the steps, turn on the porch light, or turn on the floodlights in the yard (for those after-midnight visitors).

I'd build up a simple serial store & forward unit.  This would receive occasional serial strings (in this case from a NAVTEX receiver), store the string in an I2C EEPROM and replay the string(s) on demand from another serial port (in this case a laptop and terminal program).  This should use the 2 UARTs and single I2C available on this device, and shouldn't be too difficult to implement.
