In case if somebody is also looking for official environmental requirements of LattePanda v.1 (which I wasn't able to find in the official documentation), here is answer from their support forum:
Recommended environment for LattePanda V1：
The working temperature is 0~60°C, and the working humidity is recommended between 30% and 80% RH.
