which Linux distro is easiest to work with for what projects (Examples, making an arcade machine, media box, server)

and any resources you would recommend for someone starting to learn linux

I already have a few, but they are like hen's teeth in Australia, either the shop is out, or they are about $80 per unit
i am still fairly new to Linux, and as always there are varieties of opinions online
