Ben has done this.XBox1 portable part 1, XBox 1 portable part 2, and XBox 1 Portable part 3.
Well, I think there are enough differences in the Xbox One S to justify doing another laptop/portable for the system. For example, the XB1S has a built in power supply (the first time an xbox has done this since the original) which I could imagine would make the project easier overall. Plus the system supports HDR colors and 4k video output. So I guess it would only make sense if Ben and Co. can find a 4k monitor with HDR support that can fit in a portable build, otherwise it wouldn't make much sense. My friend and I are going to look into making a portable xbox one S ourselves once we get the money together.
I'd like to see a battery powered Xbox 1s portable, but not in the sense that you can play it in the car. Ideal like to see it have a battery that would allow the user to do things like plug in extra hard drives and swap them with others.
Also that way you wouldn't be restricted by the main power supply.
Just a thought though, anything that inches it towards full on portable gaming.
