I was considering building a moving cockpit simulator, then your show came out and I thought
wouldn't it be awesome he did all the hard work for me 
Key Features include:
* At least 2DOF: (Roll/Pitch)
* Force feedback on the chair (preferably with multiple motors to simulate directional damage in a game like Freespace).
* Modular design for joystick base (so I can swap out a HOTAS type joystick with a yoke or racing wheel or keyboard/mouse).
It would be great if they were somehow hot swappable so you wouldn't have to rewire for each change.
* The motors will need to be controlled via serial interface.
x-sim or similar software can send the signal to the serial port (http://www.x-simulator.de/forum/).
* The video unit could be a simple lcd monitor, head mounted display or projection system.
I've done a little research and found some builds out there.
