This is really a pretty simple project.  There are lots of plans out there I recommend Raphael Assenat's site: http://www.raphnet.net/electronique/snes_nes_usb/index_en.php He sells the circuit board and preprogrammed chips to make it easy for even the most basic hobbyist.

Alternatively I make and sell these and a lot of other similar products including USB controllers with flash memory to store all your roms, and other cool things here:  http://www.infiniteneslives.com

Also, Think Geek sells a USB NES controller: http://www.thinkgeek.com/geektoys/games/ba5a/

And Aafruit has a kit for a SNES controller with a built in accelerometer: http://www.adafruit.com/index.php?main_page=product_info&cPath=41&products_id=241

That SNES controller w/ accerometer kit is pretty awesome!  I've never heard of such a thing.  That's actually the same accerometer that's in WiiMotes:)   I can't think of many SNES games that it would be useful to have the accerometer for, but the demo of him playing Portal looks pretty cool!  The only way to make it better would be house it up in an original SNES controller and ditch the cheap remake.

    Thanks for sharing!
