I've seen sites that sell the parts seperately, but I'd rather leave it to an expert such as yourself to figure out how to put them together!
A 10" full HD touch-screen display and WiFi would be awesome with the R-PI!

All you need is a touch screen display and you would pretty much be done. The pi costs about $30 anyway and the screen would cost the same. That's a $60 tablet. Pretty damn impressive if you ask me

It's the details that make the difference - schematics, battery, wifi, touch-screen, display, driver software, desktop integration etc have to all "just work" for a RasPi to do what you take for granted with a mobile phone.
Then there are those connectors - they have to come off if you want to reduce the thickness.
Sometimes things should work but it turns out they don't - not without a lot more work than it looked like at the start.
I've got one myself - http://philipashmore.blogspot.ie/2012/06/wifi-bargain-hunting.html.
I'm sure Ben Heck has some horror stories himeself - I know I'd like to hear them!
You know of a $30 touch screen display that takes HDMI? Sign me up!
The Pi is not well suited to making a good tablet. It has a high physical profile, poor energy efficiency because of its linear regulators, high energy consumption because of its LAN9512 and the poorly designed USB driver, inappropriate HDMI and composite video outputs, and its ARM1176 CPU is very underpowered compared to any current-generation tablet.
I'd like to use one to watch videos and remote control a PC as well as other cool stuff I haven't thought of yet.
Texas instruments has a more detailed specification you can see at http://www.ti.com/solution/tablet.
