I've seen sites that sell the parts seperately, but I'd rather leave it to an expert such as yourself to figure out how to put them together!

A 10" full HD touch-screen display and WiFi would be awesome with the R-PI!

The Pi is not well suited to making a good tablet. It has a high physical profile, poor energy efficiency because of its linear regulators, high energy consumption because of its LAN9512 and the poorly designed USB driver, inappropriate HDMI and composite video outputs, and its ARM1176 CPU is very underpowered compared to any current-generation tablet.

I'd like to use one to watch videos and remote control a PC as well as other cool stuff I haven't thought of yet.

Yes, I would like a small display for my cental heating/ventilation system, touch screen would also be nice. I am looking for one about 100 x 75 mm.
