That would be an interesting concept, however to my knowledge the games on the Atari P&P as well as most P&P systems are programmed on an IC that is covered by the infamous "black blob" making it next to impossible to rip or add games. This would require tracing the pcb which means one would need an extensive knowledge of programming and overall electronics knowledge.
Even then it's improbable and very time consuming, assuming you could even flash the IC that is currently in the P&P system.
Not saying Ben is not knowledgeable enough to do such a thing, however he usually does projects that are simple enough for everyone from beginner to expert engineers.
Although I like your enthusiasm, I think even just building a small or full size arcade cabinet from the Atari P&P or even making it portable would be a wonderful project for the show.
