I think the answer is no, unless the replacement has the same resolution, same flex connector, same pinout, and same supply voltage for the backlight. You could check the screen specification PDF (if it exists) to compare with your proposed replacement.
So in summary, it is possible with a near-similar screen, but not a totally different screen.

Typically a screen, whether it be LCD, OEM, etc has a corresponding display driver that allows it to function properly for its intended use.
Each screen is typically built with a specific display driver due to a wide variety of reasons such as resolution, color depth, data rate, etc.
Basically, the size is not the only thing different between two screens.
However, using your example, if the 7'' rear view LCD and the 7'' tablet LCD where exactly the same and used the same display driver, then yes, they would be compatible with one another.
The likelihood of that however is slim as the tablet screen would generally have a lot more resolution, color depth, data rate, etc.
There are universal display drivers available, however they are typically for LVDS LCD's such as laptop screens and are used to recycle laptop screens allowing DVI/ VGA inputs.
I don't know but I have a old tablet screen and it looks same like the one on adafruit. The theing was I wanted to acsses the touchscreen but it was held that I didn't wan't to break it. The link is-https://www.adafruit.com/products/1931
My recommendation is to look for a PDF file for the old tablet that you have so that you can view the specifications of the TFT Display is has and then compare them to the specifications of the Adafruit TFT Display which is listed under the 'Technical Details' section from the url you provided. If the specifications are generally the same, you may be able to look into a universal display driver from Adafruit such as the one displayed.
