There is the following chip:

Does there exist a chip, that can take the analogue output of that chip as input and translate it into an 8bit digital output?

I don't understand your question.
The AK8456 takes analogue inputs and has a digital output.
Can you explain a bit more what you want to do, diagrams might help.

I want to by-pass the Canon Pixma TS3350 scanner so i can put it aside.
The printer PCB checks calibration when powering-up the printer and then it can be disconnected and there are no more error messages.
