What is a good monitor and keyboard to use with the Raspberry Pi 3 Model B. I am considering order the unit and want to make sure I get a good monitor and keyboard to use with it. Does anybody have any suggestions for me.

I think fredw summarized it well! HDMI for monitor makes it much more convenient, other input is possible but requires a little finagling, I know this since my monitors are not HDMI. :-) USB Keyboard and Mouse should work fine. Depending on what OS you will be running you may look and see if the builtin Bluetooth is operational, if so then you might be able to work with Bluetooth Keyboards/Mice as well. I haven't tested this yet since I am playing with a nonpopular OS version right now and having issues with Bluetooth being recognized. But from what I have read some have been able to use Bluetooth right away just depends on what OS version.
You should look for a 1080P monitor, with HDMI input.
Your keyboard should have a USB rather than the older PS/2 connector.
Beyond that, anything goes that fits your budget.
You can get a 7" touchscreen if you like:
