Embedded Programming sounds interesting I'll say
The key to making good content is focusing on YOUR interests and YOUR passions.
If you are interested in something, there is a high likelihood someone else is too.
I am interested in embedded security: confidentiality, integrity and availability as it is my professional specialty but I agree with baldengineer that one should focus on what they are passionate about and enjoy sharing their knowledge, regardless of whether they have more or less audience.
The particular subject matter doesn't matter, but too much on one topic is not very interesting in the long run.
The most important characteristic of a useful technical channel is documentation. The best channels that I go back to most often have written tutorials and/or Github repositories to accompany the video content. The very best of these keep their information updated, mark obsolete/deprecated information appropriately and provide links to suppliers and comprehensive parts lists of the items discussed in the videos.
