I'm trying to fix a arcade game by replacing the power supply with a computer power supply and I don't understand what the negative 5 volts means on the pinouts page

Often unimplemented, nowadays. The schematic given above is correct. Those are battery (of electro-chemical cells) symbols. They could also have been drawn half as much, which symbolizes a drop or potential source, which would have been equally correct.
