the complexity of your project depends very much on what exactly you want to control. If it's only about switching the motor on and off you can take e. g. a solid state relay that is capable of switching inductive loads. If you want to make a speed control then it depends on what kind of motor you have.
Suppose you have a motor with a collector and brushes like the ones e. g. in the power drills then you can control the speed with variation of the supply voltage. These motors are series-characteristic motors that run also on DC.
If you have a real AC motor without collector but with a capacitor and a second winding to start it then you need a frequency converter to variate both the voltage and the frequency.
