happy to think about that but first a few questions
Experience level with programming in C and on the Atmel micro-controllers (Arduino Uno is an ATMEGA328 from Atmel)
budget and time (Very important if your working to a deadline)
Your interests ie, a few ideas of what you would like to try doing, we will happily make additional suggestions but currently this is like asking how long is a piece of string.
with an EE under your belt, what field are you thinking of going into, medical, Industrial Control, robotics, test and measurement, toys...... with these answered the responses can be more suited to your ambitions budget, interests and time

For the programming experience , i've done C++ , i understand the concept of variable declaration ,incrementation,array, string ,function...etc. However i had never use the ATMEGA328 ,but I have already order an Arduino kit so that I can practise a little bit and i had read some books about it .( eg :Getting started with arduino 2nd Ed, Arduino bot and gadgets ,...ect )
For the time availability , i have about 5 months to complete the project
For the budget , the project should not cost more than $200
At first , i was thinking to built a fire fighter robot ,but this project had already been taken . I'm also interested in home automation project but again there are lot of people who had work on it in the previous batch . Unless I bring a new innovation to the project i can do the same as the previous batch .
As i said above , i'm interested in robotics and also industrial control. But if one of your proposal is interesting and within the budget and time , it doesn't matter which field it is .

I think there is scope with simple things like alarm clocks and central heating controls - every one I've ever had is an absolute PIG to set up. If you could make a heating controller (programmable thermostat type) that was easy to set up with a decent display that would be really nice. I've got a cheapo chinese thing here in the lab that takes (guess) in excess of 1000 button pushes to set up for seven days after a new battery. That's because it doesn't use quite enough buttons to make setting it easy.
If you want more electronics in it try a decent controller for a domestic oven - any I've seen has a dreadful mechanical thermostat and on/off control. How about a nice display and PID control (or better) of the power into the heater. (mind out for mains stuff if you go this way !).
