I found the files for Vivado 2015.3 so I can select the Mini-ITX 045 board.
How do I do this for the SDK 2015.3 and SDSoC 2015.2.1?

Hello Sheldon,

I am not sure what sort of board files you are looking for for the SDK. You create your custom design in Vivado and then export from Vivado to the SDK.

There are no SDSoC files for the Mini-ITX board.

You may want to take a look at this SDSoC custom platform creation video:

Also, UG1146 (v2015.2.1) September 30, 2015 has a tutorial on creating a custom SDSoC Platform on page 33.
