But what would be a realistic max frequency that the zynq logic fabric could be usably clocked out on the zedboard?

I need to know more about your application. Are you trying to send a clock OUT of the Zedboard to another board?
Or are you trying to find out the max clock rate of the Zynq chip itself? The max value will depend on the input clock rate - since the PLLS can be fed from various sources it will depend on the input clock. The FMC as well as PMOD connectors have the ability to INPUT a clock INTO the PL fabric, the rate will depend on the input if you are planning to use those.
