I can only create new symbol, edit the old one, select all and then paste it into the new symbol editor. Tedious for symbol made up of 20+ parts. I am unable to copy symbol form the menu (list of symbols under a library). Is there any secret here?

It appears you are trying to use the library selection panel that appears on the right side of the screen by default when you use the tool ribbon command to View > Libraries. This is used to pick and place parts from the libraries into the schematic. Yes, it is confusing and non-intuitive at first.
Instead you want to open the library itself.
Use shortcut CTRL-O or use the menus for File > Open Document and then open the SchLib file you want to edit. Or even make a new one.
If you select the Schlib file in the project files panel you should get an icon on the toolbar to open the library panel.
