You cannot beat the 4 USD Cypress Semiconductor board.

The software support is great and the chip has programmable analog and digital hardware capability.

Nothing else comes close to its versatility for a basic board.

    or TI MSP430

MSP430 LaunchPad Value Line Development kit - MSP-EXP430G2 - TI Tool Folder

    or ....PI....BBB...Intel...Microchip...all are good.

The choice depends on what type of project you want to construct.

If you want to develop VR games, you'll need an Intel Core I7, if you want to blink an LED, any of the above will do the trick.

If you want it to fit in a matchbox, go with the LPC810.

If you really want a "Micro-computer", go with a mini-ITX

    Search for Cypress Semiconductor PSOC.

You will find that they have a wide range of boards available for most applications.

Plus they are a leader in capacitive sensing.
