Hi, you could take a look at making a MultiWii http://www.multiwii.com/ (Named so, because it can use the sensors from a Wii controller!), you will be able to find the schematics, sketches and lists of various parts.
The only other things you will need are to be able to program AVRs, follow diagrams, solder cleanly and have a bit of patience (And a bit of imagination on a nice frame design would make it awesome!).
(I am currently building one myself and after examining loooooads of different controller boards and systems, I decided that this was the easiest option for me! 
)
