I'm looking for a 'push to make' HDMI switch which could be used to flash up an image onto a secondary screen for a customer to view but then would cut out again when released.

If you can do with a toggle switch and an unused output - there are quite a few inexpensive units on Amazon.
I haven't used one, but the reviews look okay.

It depends on your requirements but if you are expecting a responsive glitch free operation then you might want to consider issues like the secondary screen going into standby with loss of signal; EDID with multiple displays; HDCP key negotiation, etc..HDMI matrix switchers can often take care of these sort of issues by keeping the display active, doing EDID emulation and HDCP key minding.
If you are using a dual-head machine e.g. secondary monitor on the laptop HDMI out, then you could perhaps have a generic switch connected to a USB port that allows you to make changes the laptop display settings or control a program that is displaying images to the secondary display.
