For embedded systems I recommend the TI-RSLK Maze Edition, it comes with 20 learning modules:
There are a lot of embedded projects with microprocessors here on the element14 site. Look around and find a project that is interesting to you and then dig deep, trying to understand the basics of the design and how the software enables it. Better yet, try to build the project and then make improvements/modifications to understand how to expand upon the design.

There are a wealth of online classes for basic electronics.
An RPi PICO is a good place to start for a microprocessor and can easily take you to initial embedded system projects.
I am embarking on a project that has to do with drone stability and implementation of PID control, need help with sources that I can get resources to aid my project, I also need to know sites where I can order PCB components for good prices. As I said. I am new to this but I am willing to gain knowledge and experience from all provided resources.
