If you put some details that what is range you are looking for and rough image of structure you are designing then some one can answer more precisely... As of your question I unserstand, I suggest you to use LVDT sensor actually used to detect displacement.
There are lots of great linear position sensing technologies for harsh environments such the LVDT mentioned above. Others include Positek inductive position, Honeywell Smart magnetoresistive, Micro-epsilon magneto-inductive, Penny&Giles contactless linear, SenseAble magnetostrictive, etc. However these are all pretty expensive. There are many others thjat are lower cost, but require some mechanism to adapt to this application such as Hall effect, optical encoders, ultrasonics. etc. One low cost sensor you might be able to use is an optical proximity sensor such as a Sharp GP2Y0A02YK0F.
