I think you can distinguish between humans and small animals based on the number of "hot cells" in the 4x4 or 1x8 array (depending on the sensor model). For example, you could say that when there is a human there are at least two cells that detect a temperature greater than 36 degrees.
The mounting height (as well as the view area) depends on your application
