You're absolutely right.
The Piezo drum hits requires mighty hits to accomplish signals of this magnitude. Just tapping it produces neglible energy.
The printer motors produce very stable power. The magnitude of the signal is proportional to is rotational speed.
From past experiments with Solar it works really well.

Can I assume that the cymbal and drum signals are from single impulse hits?
Have you considered setting them up with either falling water or sand to drive the impulses?
I am also assuming that the printer motors were just given a quick twist.
Have you considered putting a air capture or motor driver to see how stable the output from the motors changes over various speeds?
Does the output current/power rise with higher speeds?
I also assume that the ice block signal is from your thermocouple.
Have you considered attaching a solar cell to the other side to see how much additional power you can extract from a solar illumination?
