I already have Vivado 2019.1 installed. Can I install Vivado 2021.1 and keep the old one?

Yes, you can install multiple versions Vivado. However, make sure Linux version is supported for the Vivado version to ve installed by AMD/Xilinx if you plan to use virtual machine or Ubuntu.
