I was experimenting with the lm35 dz temperature sensor to see if it would work like a transistor. Amazingly, it acted the same as a PNP transistor. Can someone tell me why this is?

Well, it is a diode temperature sensor, and the adj terminal does modulate the output.
What a curious experiment keon!! hahaha
If you look at the block diagram of the datasheet, you will see that the output of the sensor is a PNP transistor, where the colector is tied to VCC, and emitter tied to the output, so you can see the PNP transistor behavior when acting on the GND pin as it was the base pin of the transistor.
But for such a purpose better use PNP transistors...
