What are the parts you have available, and what sort of project are you thinking of in terms of software/firmware/PCB/soldering etc?
if you have some wifi dev boards and a computer, I’ve found that my sensors setup has been useful across many different applications since I set that up many years ago: Wemos D1 mini sensors (Arduino) sending updates to a Raspberry Pi running mosquitto mqtt and NodeRED.

For me, I got it once I admitted that it's a separation like the one you get physically different networks. It's all on the same cable, but there is one network interface per VLAN, so if you want traffic to go from one VLAN to the other, you have to use a router (layer 4) or layer 3 switch capable of VLAN to VLAN communication.
Start with something that already interests you and then look at how it can be improved or how you can do it with more efficiency. Maybe look at a different tool that requires less command line interface or code consumes less power etc etc.....i'd be interested in hearing about tools that make prototyping more efficient that what I have be accustomed too. - Happy New Year Y'all
Do you want an electrical challenge? Maybe design an audio amplifier that has less than 1 bit of noise for a signal with 16 bit resolution.
Do you want a firmware challenge? Maybe try generating a video waveform that an analog video monitor will display.
Do you want a mechanical challenge? Maybe try designing a propeller.
Do you want a multi-disciplinary challenge? Maybe try to design a robot the can fetch you a drink.
