If you are shining a 850nm laser directly down the fibre then you could detect it with a laser light detector such as: https://www.finisar.com/optical-components/hfd3180-103

Fiber optic cables have different frequencies from the light you and me see. That is why you are warned never look t the light! It will burn the retina severely depending on time of exposure. Please read…

    I agree too with Clem.

Anyway yes camera sensors are a little more sensitive than the human eye so they can see a piece of IR spectrum, (you can verify it with your phone and the tv remote, just point the camera to the ir led and press a button, you will see a white light, with a laser probably you will burn the camera as Brian wrote). If it is only for demonstration purpose you can use an IR led instead of a laser.

Also camera sensors aren't all equal, probably with some type of camera you can see a piece of ir spectrum and with other no.

I have never tried to acquire picture with arduino but yes you can do it (take a look here How to use OV7670 Camera Module with Arduino? ), but don't expect high resolution or fast acquiring images.

Honestly I can't understand what do you want to obtain with this project, what is the final goal?
