I am not aware of anyone building an evaluation board with bootable NAND. I think the biggest issue with NAND as a boot device is the wear leveling. That boot block of memory will be hit over and over again.
I suggest you check out this design from Enclustra. I think they have spent the most time investigating NAND with Zynq, and they have chosen a hybrid model with bootable QSPI then switch-over to NAND.
