Double posting is not good etiquette.
I don't believe there is currently a way to get what you ask. Once a trace
is routed into copper turning off the layer or highlighting with 'show' is
about all you can do.
Have a look at ripup and ratsnest. This could be an approch for you earlier
in the routing process particularly the command
ratsnest ! GND VCC
That will hide all the GND and VCC airwires which often get attached to a
polygon later so you get them out of the way while routing the other
signals.
