Draw your polygon around the area that you want to have a ground plane (I
generally outline the whole board :-). Click on the "rename" icon, then
click the edge of the polygon, and name it "GND" (or "VDD", or whatever).
Voila! Note that if you use a ground plane to make all your ground
connections, you need to watch for any airwires where the ground plane
can't connect to somewhere; you may need to manually route a ground line
to make any such interconnects.
BTW, don't forget to change (the wrench icon) the Isolation value (then
click your ground plane) as needed; click on the ratsnest icon to refresh
the ground plane display.
