For text on the Top layer, write that text into the tRestrict layer, when
you pour the polygon it won't pour where you have the text.
The "isolate" setting for the polygon comes into play and ideally for your
text needs you would set it to zero
The width of the polygon wire also affects the exactness that the pour wraps
to the text but small widths generate larger Gerber output so use as big a
width size for the polygon as you can tolerate.

Addendum: It makes sense to use a separate, smaller polygon (with lower
rank) only for the area that contains the text. This way, you can easily
use zero isolate and small width in the text area, without getting too

Thank you both for showing the way. I had found the Restrict layers on my
own but could not fathom how to obtain a decent-looking result.
