No where in the tutorials can I see how to specify a single layer only
board. Could someone please assist.

This is the author of original post. For benifit of others found the
following ideas that work after some searching further and an email
response from Mogens Dreier
1st method
The default setting in EAGLE is to create two layer boards.
This is defined in the Design Rules, Layers tab.
There is written in the Setup line (1*16) which allows to use two layers
(1 and 16)
and set Vias (the parenthesis around the term).
If you want to define/use only one layer (without vias) then write into the
Setup line: 16
Or simply leave it as it is and use only wires in layer 16, Bottom
Mogens Method
You have made your .sch, used 'switch to board'? If your layout is OK! then
'tools' -auto.
Now you have some scrolldown menus. So if you want to use 'bottom layer'
the others must
show N/A and a * for bottom layer.
There ia also a 'display' knob where you can switch the layers on/off (3
colours).
